Our basque d' espelette (Capsicum annuum) seeds are sold with a certificate of authenticity
and are from what is considered the best pimento growing district in the Espelette Basque AOC area.
The Genuine Espelette pepper is grown only in 10 areas: Ainhoa,
Cambo-les-Bains, Espelette, Halsou, Jatxou, itxassou, Larressore, Pée
Saint-sur-Nivelle, and Souraïde Ustaritz.
Our Espelette Basque Chilli Pepper seeds are
from the most prized growing area in the Piment D' Espelette Basque AOC.
Originally from South America, it seems that the pepper
was imported in 1650 by a Basque navigator who accompanied Christopher
Columbus. After years of studies and tests 2000 saw the recognition of the
AOC Piment d' Espelette. The appellation was enhanced in 2002 by obtaining the
European PDO, Protected Designation of Origin (PDO)
This means that the seeds are protected and can only be grown in the
areas mentioned above and is against the law to grow to sell seeds and
name them
as Espelette Basque Chilli Pepper

Basque chilli pepper production is managed by the
Department of Fraud which guarantees the origin of the
Espelette Basque Chilli Pepper pods,
powder and seeds.
The Basque chilli pepper is more aromatic and sweet than
hot. Espelette chilli peppers are tied with string the strings of
peppers are hung in the kitchens to dry. Once dried they are
ground to a powder which is very much prized around the world in the
home and in many restaurant kitchens.
In the kitchen, this spice substitute is for providing pepper spice and
perfume to all your meals.
The chilli is used in Basque Cuisine to give taste to the simplest
dishes such as omelettes, fried eggs, grilled sardines or salads…
Sprinkled on grilled goat or sheep cheese, the Basque chilli breathes
out its blend of flavours. We always add a pinch of Espelette chilli
powder in Basque recipes such as “piperade”, “axoa” or “marmitako”.
Basque chilli can have a fruity tomato flavour or a dry hay scent, but
what makes it special is the aromatic aspect of it, rather than its
intensity.
Depending on the Summer the Espelette chilli pepper plant grows between
60cm and 1.5m high producing between 15 to 30 fruit per plant.

7 Pod / 7 Pot Chilli Seeds Currently one of the most sought after and difficult to obtain
peppers.
The 7 Pod (sometimes called 7 Pot, as in 1 pod will spice seven pots of stew.) is a Chinense variety from Trinidad. This variety is matched for heat by just a small number of other Chinense varieties, namely the Bhut Jolokia, Bih Jolokia, the
Dorset Naga/Naga Morich, and the Trinidad Scorpion
(see below). The texture of the peppers is very different to your
average capsicum. Rather than the smooth, shiny surface of most peppers, the 7 pod has an almost paper-y texture and pods start lime green rather than the usual dark green. Seeds have been grown in Trinidad and not isolated so some cross pollination is possible and pure strain 7 pod cannot be guaranteed. Having said that, a 7 pod cross would be an even rarer

CPI Bhut Jolokia
The world’s hottest chilli is the Bhut Jolokia originating in Assam in North East India. This Guinness World Book Record Holder variety is bred by The Chile Pepper Institute with an official Scoville heat rating (SHU) of
1,001,304 SHU twice that of the previous record holder, the Red Savina.
A SHU stands for Scoville Heat Unit and is the amount of water needed before the chilli heat is undetectable. One drop of the Bhut Jolokia extract needs a million drops of water. (Capsicum

The
Original, and still the hottest Naga Morich
The Naga Morich 'snake or serpent chilli' is one of the world's most respected
hot chilli peppers. A recent sample of
fresh fruit of the rare Bangladeshi Naga Morich chilli was tested by Warwick University using HPLC and registered a
hot tongue numbing 1,598,227 Scoville Heat Units (SHU).
To compare the Naga with the Bhut a HPLC test would need to
be carried out on a dry sample as for the Worldwide Standard
Sampling Techniques as was used to test the Bhut Jolokia. The figures
for a test carried out under the standard test situations are showing that the comparable heat is around the
800,000 to 900,000 SHU. These original Naga Morich seeds have not been grown by gardeners at home, these are the genuine Naga Morich. Naga Morich is
the closest relative to the Dorset Naga.
Currently original Naga Morich seeds are scarce, and Naga seeds
with proven provenance are even scarcer still. Our Naga

The
Ancho pepper provides an authentic flavour to Mexican
cooking. Easy to grow and dry, perfect to have in the
kitchen for all types of cooking because these peppers are not
hot. Grown in Mexico, Anchos are common to Mexican and South-western cooking. Anchos have a mild, sweet, fruity flavour. Ancho is the most commonly used dried chilli in Mexico. An Ancho is a dried Poblano Pepper and often is mislabelled as a Pasilla or Mulato pepper. Anchos can be used as a substitute for Guajillo or Pasilla Negro and visa versa. These chillies have the same heat range and flavour profile. Ancho, Pasilla and Guajillo form the Holy Trinity of chiles used to prepare traditional mole sauces.

This chilli is the same family as a Habanero, Capsicum Chinense. The word "suave" is Spanish for mellow, smooth or mild. The Red Savina measures 577,000 SHUs, the hottest in the world and the Orange Suave measures 835 SHUs. The Chile Pepper Institute have developed these two chillies with all the flavours of the Habanero but less heat. These are must have chillies for cooks who like the taste of the Habanero. Capsicum Chinense have unique flavours but most people can not taste them because of the heat. The Suaves have a citrus like flavour with an orange lemony overtone with an apricot aroma.

The Habanero is one of the world's hottest and most renowned chillies. For the uninitiated even a tiny piece of Habanero would cause intense and very prolonged oral suffering. Underneath the heat is a delicate plum-tomato apple-like flavour. Grown in Mexico and the Caribbean. It has an irregular spheroid shape, with a small point, and is around 1 inch to 1-1/2 inch long. It is available in orange, green, yellow, scarlet, brown and deep red. It has a number of close relatives such as Scotch Bonnet and Rocoto. It is used mainly raw because it loses subtlety, but not heat, when cooked. The Habanero when ripe or dried and powdered has a unique apricot scent. (Capsicum Chinense)

This striking and very useful hot chilli from Assam an area in India close to the famous city of Tezpur, renowned for bringing us some of the hot varieties
of chillies around. The chilli has a cited heat level of 855,000 SHU but it is
very doubtful it holds this much heat!!!!
Probably it would be closer to 100,000 SHU if, that. Lots of

suppliers call it Naga Jolokia by mistake. According
to our informed local experts, the chilli tested with a heat
level of 855,000 SHU was actually the Bhut Jolokia which in
some parts of India is called Naga Jolokia, Naga being an
area and Jolokia meaning Pepper or chilli. This was
the hot chilli tested with a recorded heat level of 855,000 SHU.
Indian PC-1 is a Capsicum annuum. As you can see from the
photographs, the Indian PC-1 chilli (AMKA also mistakenly
known as the Naga Jolokia)
actually bears no resemblance to the Capsicum Chinense
family to which all the hottest varieties belong. This is no
reason not to grow it but please do not mistake it for the
similarly named but much hotter Bhut/Bih Jolokia.

Some hot chilli seeds can be tricky to germinate and do
benefit from the germination solution and a germination
temperature of between 80°F and 89°F. The pepper flowers also
