Chiltepin Pepper (Capsicum annuum var. glabriusculum) aka (Capsicum annum var. aviculare) is a s mall, pea-sized chile that
grows wild on 3-4 ft-tall shrubs in parts of Texas and Northern Mexico. Coming in at 50,000-100,000 Scoville Heat Units (SHU), this pepper is ferociously hot and pungently flavoured. The heat comes on violently, yet diminishes rapidly, a trait that I suspect adds to its distinction as a much-loved and addictive delicacy.
In Mexico, the heat of the chiltepin is called arrebatado rapid violent, because, while the heat is intense, it is not very enduring. The delicate balance of its heat and its short lasting sensation allows the taste of the foods it is combined with to be enhanced, instead numbed. The Chiltepin is sometimes called the “mother of all peppers.” The Word Tepin is derived from a Nahuatl word meaning flea common names for Tepin chilies include chiltepin, chiltepe, and chile tepin, as well as turkey, chile de monte. These chillies are small and round. The most common colour is red, much rarer are colour is yellow only 2 plants found in the wild and a cappuccino colour only 15 plants found in the wild.
This historic chilli is currently facing extinction due to over-picking in its natural habitat. Our pods and seeds are supplied from an ecologically friendly endeavour which is working to conserve these chillies and their environment in the wild and protect them from potential extinction. The pods are harvested by hand from these protected plants and dried daily to guarantee the freshest and highest quality pepper.
